{Bruschetta} Brie, Pear & Caramelized Onion

I lovvveee me some bruschetta. Doesn't really matter what's on it, I'll most likely scarf down a dozen or so. Maybe that sounds like a ridiculous amount, but I have a hefty appetite and can put away a good amount of food. Ask my friends and family - they'll tell you I'm a human garbage disposal. 

Ok, back to the food. I was getting bored with my usual, awesome pesto bruschetta {recipe coming soon!}, so I decided to experiment a little here. The pear really compliments the Brie cheese, but one thing you should note is to only use RIPE pears. Pears tend to lack in flavor if they're not ripe enough. They're also tough and have an even weirder texture than normal. So make sure your pretty little pear is more than ready to eat, or else this dish will just taste so-so. When all said and done, these little bites just melt in your mouth. Very indulgent, but so worth it. 

{Makes 22}

Ingredients: 1 baguette. 1 onion, sliced. 2 pears, peeled and sliced. 1/6 wheel Brie cheese. 2 Tbsp olive oil. 1 Tbsp brown sugar. 2 tsp balsamic vinaigrette {optional/if needed}

Directions to caramelizing onions:
  1. Heat up olive oil in a pan over medium heat. Add your onions and brown sugar – stir to coat. Then, turn your burner down to a low-medium heat.
  2. At first, stir your onions every 5 minutes or so. Let them “sweat” which will allow all the water to release into the pan and evaporate slowly. This ensures your onions will caramelize all the way through and not just on the outside.
  3. After about 15 minutes, you’ll need to really pay attention to your onions. Stir frequently so your onions don’t stick to the pan and burn. If you come across that problem, just add a little water or balsamic vinaigrette to rehydrate your onions.
  4. Cook the onions until they’re soft and anywhere from honey-colored to deep brown. {Mine pictured are really caramelized because I was busy taking pictures and forgot about them} . I suggest cooking them for 30-35 minutes in order to achieve.
Directions for bruschetta:
  1. Preheat oven to 350 degrees. 
  2. Cut the loaf of bread into 1 inch slices. Place slices on a baking sheet and put in the oven for 3 minutes to lightly crisp up. 
  3. Take the baking sheet out of the oven and place somewhere you can easily assemble the bruschetta. 
  4. Add 1 slice or about 1 Tbsp of Brie cheese to each slice of bread. The, add one slice of pear on top, followed by a scoop of caramelized onions. 
  5. Place the baking sheet in the oven and bake for 5-8 minutes or until the cheese is nice and melted. 
  6. Remove the baking sheet from the oven and set aside to cool for 2 minutes.

Eat and enjoy your nom noms!
